Ingredients:

  • 100g strawberries
  • 250g rocket
  • one tablespoon of balsamic vinegar
  • five tablespoons of olive oil
  • walnuts

Preparation:

  1. Pour the balsamic vinegar and olive oil into a small jar or a special shaker and shake it thoroughly to create an emulsion for the dressing.
  2. Rinse and dry the rocket — you can use a salad spinner for this purpose.
  3. Wash the strawberries and cut them into quarters or slices.
  4. Place all ingredients in a wide bowl.
  5. Drizzle the dressing over everything, finally add the walnuts and mix — special salad servers may come in handy.
  6. The salad is ready!

Strawberry and feta salad

A strawberry salad with a refreshing hint of mint is a combination made for a hot day. A light yet satisfying meal will let you savour the true taste of summer!

Ingredients:

  • 250g strawberries
  • 60g feta cheese
  • a handful of rocket or mixed salad leaves
  • a handful of blueberries (optional)
  • three tablespoons of fresh, chopped mint
  • three tablespoons of extra virgin olive oil
  • one tablespoon of honey
  • two tablespoons of lemon juice
  • salt and pepper
  • a handful of nuts (optional)

Preparation:

  1. Mix the olive oil, honey, lemon juice, and 1 tablespoon of mint.
  2. Rinse, dry, and place the rocket/mixed salad leaves in a bowl.
  3. Wash and cut the strawberries into quarters or slices, rinse the blueberries.
  4. Grind black pepper using a salt and pepper mill.
  5. Dice the cheese, then coat the pieces in pepper and the remaining 2 tablespoons of mint.
  6. Place all ingredients in a bowl, season with salt and the remaining pepper, drizzle with dressing, and mix thoroughly.
  7. That's all — enjoy your meal!

Strawberry and blue cheese salad

A salad with the addition of blue cheese is an exceptionally elegant composition of flavours, ideal for a summer candlelit dinner.

Ingredients:

  • 250g strawberries
  • 150g blue cheese
  • two larger pears (firm and ripe) or peaches
  • mixed salad leaves/lamb's lettuce
  • half a bunch of parsley
  • four tablespoons of olive oil
  • two tablespoons of balsamic vinegar
  • one teaspoon of lemon juice
  • salt, pepper, half a teaspoon of Provencal herbs

Preparation:

  1. Add herbs and spices (to taste) to the balsamic vinegar. While stirring, gradually pour in the olive oil to form a dressing.
  2. Rinse, dry, and place the salad leaves in a bowl.
  3. Chop the parsley.
  4. Wash the strawberries and cut them into slices or quarters.
  5. Peel the pears/peaches — the process will be much easier using a special vegetable peeler — then wash them, dice, and sprinkle with lemon juice — this will prevent them from browning.
  6. Dice the blue cheese — special cheese knives will make slicing easier.
  7. Place all ingredients in a bowl, drizzle with dressing, and mix thoroughly.
  8. Enjoy!

Asparagus and strawberry salad

Looking for a good source of potassium, magnesium, and calcium, all wrapped up in a tasty vegetable? Reach for asparagus — it's a real vitamin bomb! By including them in your diet, you provide your body with a huge dose of essential nutrients. A salad with strawberries and asparagus is truly an exceptional combination!

Ingredients:

  • half a bunch of green asparagus
  • a small head of lettuce
  • 250g strawberries
  • 100g cheese, e.g., feta, goat's or camembert
  • two tablespoons of olive oil
  • juice of half a lemon
  • almond flakes/sunflower seeds
  • coarsely ground black pepper, sea salt

Preparation:

  1. Rinse, dry, and tear the lettuce into small pieces.
  2. Wash the asparagus and snap off the woody ends, then cut into 2 cm pieces.
  3. Steam the prepared asparagus for 2-3 minutes. Steaming will be easier with suitable dishes — this way, the vegetables won't lose their valuable nutrients.
  4. Blanch the cooked asparagus under cold water and drain.
  5. Wash the strawberries and slice or quarter them, dice the cheese.
  6. Mix the olive oil with lemon juice and spices.
  7. Place all ingredients in a bowl, mix, and drizzle with dressing.
  8. Sprinkle the salad with almond flakes or sunflower seeds. Done!
