Ingredients:

¼ cucumber

½ small carrot

3 radishes

1 small egg

4 tablespoons cooked millet

a handful of rocket

a handful of broccoli sprouts

Vinaigrette Ingredients:

2 tablespoons olive oil

½ teaspoon Dijon mustard

½ teaspoon honey

½ teaspoon lemon juice

1 small clove of garlic

Instructions:

  • Peel the cucumber using a vegetable and fruit peeler, scoop out the seeds, and cut into thick cubes.
  • Peel the carrot and grate it using a grater or slicer.
  • Slice the radish into thick rounds.
  • Slice the egg using an egg slicer.
  • Wash the rocket and dry it in a salad spinner.
  • Prepare the vinaigrette. Mixing all the ingredients together will be much easier if you have a clever kitchen gadget like a dressing shaker. Just add the oil, mustard, honey, lemon juice, and a garlic clove pressed through a garlic press, then seal the container and shake until the dressing is smooth.
  • To ensure the vegetables stay fresh and crisp, first pour the dressing into the jar, then add the cucumber, carrot, radish, and millet. Next, layer the rocket, egg, and broccoli sprouts. Seal the jar with the salad and store it in the fridge until you're ready to eat. Before serving, give the jar a few shakes to ensure the dressing coats all the ingredients.

Ingredients:

½ cup cooked pasta

6 cherry tomatoes

50g canned tuna in brine

a handful of rocket

Pesto Ingredients:

a small handful of rocket

1 clove of garlic

25g Parmesan cheese

a small handful of flaked almonds

2 tablespoons olive oil

salt and pepper

Instructions:

  • Wash the cherry tomatoes and cut them in half.
  • Drain the tuna.
  • Prepare the pesto. Put a small handful of rocket into a blender, add garlic, cheese, flaked almonds, olive oil, and salt. You can also prepare the garlic beforehand by crushing the cloves in a garlic press. Blend everything until smooth and consistent. In a mortar and pestle for herbs and spices, crush a few peppercorns and add them to the pesto. Mix well.
  • Layer the ingredients in the jar in the following order: pesto, cooked pasta, a handful of rocket, cherry tomatoes, and tuna.

Ingredients:

1 peach

a handful of strawberries

1 kiwi

a handful of blueberries

a small bunch of sweet grapes

a slice of melon

a slice of watermelon

1 tablespoon honey

Instructions:

  • Wash and dry the fruit.
  • Peel the peach, kiwi, watermelon, and melon, then cut them, along with the strawberries, into fairly large cubes.
  • Put all the fruit into a bowl, add honey, and mix.
  • Transfer the prepared salad to a jar, seal it, and it's ready!

Ingredients:

a handful of spinach

¼ red grapefruit

¼ avocado

¼ mango

½ small red onion

⅓ cup cooked chickpeas

2 tablespoons olive oil

salt and pepper

Instructions:

  • Wash the spinach and dry it in a salad spinner.
  • Peel the grapefruit, removing the white, bitter membranes, then cut into smaller pieces.
  • Peel the avocado and mango and cut them into large cubes.
  • Slice the onion into thin feathers.
  • Layer the salad in the jar. First, put half the spinach into the jar, then the grapefruit, followed by avocado, onion, chickpeas, the remaining spinach, and mango. Grab an oil and vinegar dispenser, measure out two tablespoons, and drizzle it over the salad. Finally, season with salt and pepper. Seal the jar tightly.
  • Before serving, shake the jar thoroughly so that all ingredients are well mixed.

Beetroot, Feta, and Rocket Salad in Jars

A light, delicious, and nutritious salad with roasted beetroot, feta, and walnuts that you can pack into a jar and take to work, a picnic, or a spontaneous trip out of town.

Ingredients:

1 roasted beetroot

a handful of rocket

a handful of walnuts

30g feta cheese

Dressing Ingredients:

1 tablespoon olive oil

½ tablespoon lemon juice

½ teaspoon mustard

½ tablespoon honey

salt and pepper

Instructions:

  • Peel the roasted beetroot and cut it into fairly large cubes.
  • Toast the walnuts. Pour the walnuts onto a preheated, dry frying pan. Toast them for about 4-5 minutes, until you can smell a lovely nutty aroma. In the meantime, give the pan a few shakes to prevent the walnuts from burning. Transfer the toasted walnuts to a plate and let them cool.
  • Prepare the dressing. Pour olive oil, lemon juice, and honey into a dressing shaker. Add mustard, salt, and pepper. Seal the container tightly and shake for a moment until a uniform dressing is obtained.
  • Wash the rocket and dry it in a salad spinner.
  • Dice the feta into small cubes.
  • Layer the salad in the jar. First, pour in the dressing, then add the rocket, followed by beetroot and feta. Sprinkle the toasted walnuts over everything. Close the jar.
  • Before serving, shake the jar thoroughly to ensure all ingredients are completely coated with the dressing.
