or cottage cheese, has been known for many years across almost all of Poland. In the past, our grandmothers used to make it, and today, we can become masters of its preparation. Cottage cheese is an incredibly valuable product. A significant portion of it is water, while the main component of its dry mass is easily digestible animal protein, which is a crucial building block for tissues and bones. Based on fat content, we distinguish three types of white cheese: skim, semi-skim, and full-fat.

Cottage Cheese - Make It Yourself!

It's no secret that store-bought products rarely taste as good as those we prepare in the comfort of our own homes. Moreover, by consuming homemade goods, we have a guarantee of their quality – we know we've used healthy, fresh ingredients. But above all, making white cheese yourself brings immense satisfaction! Don't Forget the Milk!

The essence of good cottage cheese lies in using real cow's milk or regular pasteurized milk; however, UHT milk is not suitable. The fat content should also not be less than 3.2%.

Ingredients:

- 3 liters of milk (min 3.2%, preferably unpasteurized)

- ¼ teaspoon of salt

- 120 ml lemon juice or 75 ml vinegar

Preparation:

  1. Remember that using vinegar instead of lemon will result in a slightly firmer consistency for your cottage cheese. It's best to prepare the cheese in both versions and see for yourself which one you prefer.
  2. Heat the milk to the appropriate temperature – 92°C (use a thermometer for this).
  3. Then remove the milk from the stove and mix it with lemon juice or vinegar. Let it sit for 30 minutes.
  4. After this time, slowly strain the whey, which is the translucent liquid remaining after the milk has fully curdled.
  5. Place the prepared cottage cheese into a special cheese-making set. The container should be kept in the refrigerator for at least two hours, but it's best to leave it overnight and enjoy a delicious cottage cheese sandwich in the morning.

Try It with Additions!

You can also prepare cottage cheese with additions yourself. Just follow the recipe above and modify it slightly.

Additional Ingredients:

- A tablespoon of black cumin seeds

- A pinch of salt or colorful pepper

Preparation:

  1. Once the milk curdles, add about 1 tablespoon of black cumin seeds and a pinch of salt.
  2. Then proceed exactly as in the recipe above.

Remember, you don't have to throw away the whey! Try blending it with your favorite fruits or using it for cookies and waffles. Whey proteins are considered to have the highest nutritional value, making them easy for our digestive system to handle. It's a rich source of phosphorus, calcium, and numerous vitamins.

Cottage Cheese with Soured Milk!

Another secret to exquisite cottage cheese is the exclusive use of soured milk. This option should be chosen if you enjoy a tangy cheese flavor.

Ingredients:

- 3 liters of soured milk (you can buy it in a store or prepare it yourself – homemade tastes even better!)

Recipe:

  1. Carefully transfer the soured milk to a pot, making sure not to break up the curds.
  2. Slowly heat the curds to a temperature of 36-39°C. Remember, the lower the temperature, the more delicate your cottage cheese will be.
  3. Keep stirring and maintain a constant temperature for about 0.5 to an hour.
  4. Set aside to cool for about 2-3 hours.
  5. Then place the curd pieces in a special cheesecloth placed in a colander – leave until drained (you can also use a colander lined with gauze).
  6. Enjoy the best cottage cheese in the world!

A special cottage cheese making set is particularly noteworthy, as it will undoubtedly make your work much easier and more efficient. Such a set should consist of a colander, which allows you to strain the cheese, as well as a lid with a measuring cup for vinegar or lemon juice. Special cheese molds are invaluable, as are smaller accessories, such as a thermometer, which helps you check the milk's temperature.
