To prepare the French bake good, you need a proper tart form, which is characterized by a low, notched edge. The classic tart forms have a spherical shape, but you can easily find square and rectangular forms. Tart pans also differ in the material they are made of, with metal moulds being the most popular. It is also worth to note that there are silicone tins for tart baking which do not require the use of baking paper or butter spread before baking.

Sweet chocolate tart with raspberries

The tart that melts in your mouth on a crispy and chocolate bottom with an intense chocolate cream and raspberries, perfectly breaking the sweetness of chocolate, it's a bake that no one can resist.

Ingredients for the shortcrust:

  • 1 glass of wheat flour
  • 3.5 tbsp of cocoa
  • 100 g of butter
  • 1 egg
  • 2/3 cup of icing sugar
  • A pinch of salt

Ingredients for the chocolate cream:

  • 500 ml of the 30% cream
  • 2 tablespoons of icing sugar
  • 150 g of bitter chocolate
  • 50 g of milk chocolate
  • 2 teaspoons of gelatine
  • ¼ glass of water

Preparation:

  • Sift the flour and the cocoa onto the table. Add butter and quickly chop it with a knife until the dough starts to look like crumble.
  • Add an egg, sugar, salt and quickly knead the dough.
  • Make a ball out of the dough, wrap it in a food wrap and put it in the refrigerator for 45 minutes.
  • Grease the tin with butter and sprinkle with wheat flour. If you use a silicone baking form you can skip this step, because silicone moulds do not need to be prepared for baking.
  • Use a rolling pin and roll the cooled dough to a thickness of about 3 mm and put it onto the form.
  • Put it back into the fridge for about 30 minutes.
  • Sprinkle the cooled dough with wheat flour, put baking paper on it, put ceramic balls onto the paper, so it adds weight to the dough.
  • Place the cake tin in an oven preheated to 200 degrees Celsius and bake for 15 minutes.
  • Prepare the cream. Melt the chocolate in a water bath and leave it to cool.
  • Pour water over the gelatin and leave it to swell and then briefly heat it, only to dissolve it.
  • Whip the cream with icing sugar until it stiffens. Add melted chocolate in several batches and mix it.
  • Pour the gelatin in a thin stream, stirring the mixture all the time.
  • Put the cream on the crumbly bottom and refrigerate for about 3 hours.
  • Put the finished tart into a shelf or a cake pan and decorate it with fresh raspberries.

Recipe for an apple tart

Traditional tart on a thin, crumbly dough, that does not require prior baking, with delicious apples, is a delicate and a tasty dessert. The crispy and aromatic fruit tart tastes best accompanied by a cup of aromatic coffee or tea.

Ingredients for the shortcrust:

  • 2 glasses of flour
  • 220 g of butter
  • 2 yolks
  • 2/3 cup of icing sugar
  • pinch of salt
  • 2 tablespoons of cold water

Ingredients for the apple pie:

  • 1.5 kg of apples
  • 4 tablespoons of sugar
  • 2 teaspoons of cinnamon
  • 3 tablespoons of lemon juice
  • Additionally: about 2 tablespoons of breadcrumbs.

Preparation:

  • Sift the flour onto the bakeboard, add butter and quickly chop it with a knife until the dough starts to resemble a crumble.
  • Add yolks, sugar, salt, water and quickly knead the dough.
  • Make a ball out of the dough, wrap it in a food wrap and refrigerate for 45 minutes.
  • Peel the apples, hollow out the seed nests, cut them into quite large pieces and put them in the pan together with sugar, cinnamon and lemon juice. Cook for a few minutes until the apples are soft. Allow to cool slightly.
  • Take the dough out of the fridge and split it into two parts. Using the rolling pin, roll the first part and put it onto the mould. Dust the dough with breadcrumbs and put it on the apples. Roll other part of the dough and put it on top of the apples. Punch the dough with a fork.
  • Place the cake tin in the oven preheated to 180 degrees and bake for 45 minutes.
  • You can sprinkle the finished dough with powdered sugar.
  • Serve the apple tart on a dessert plate together with a pastry fork.

Savoury tart, i.e. the tart with spinach, feta and bacon

A tart with spinach, feta cheese and smoked bacon is a great idea for a delicious lunch or dinner.

Ingredients for the shortcrust:

  • 2 glasses of flour
  • pinch of salt
  • 150 g of butter
  • 2 yolks
  • 1 tbsp cold water

Ingredients for the spinach stuffing:

  • 200 g of fresh spinach leaves
  • 100 g of smoked bacon
  • 1 spoonful of butter
  • 1 onion
  • 2 cloves of garlic
  • 200 g of feta cheese
  • 200 g of the 18% cream
  • 2 eggs
  • 100 g of cheese
  • spices: salt and pepper

Preparation:

  • Sift the flour onto the table. Add salt and cut butter into smaller pieces. Chop it up with a knife. Add yolks, water and quickly knead the dough.
  • Form the dough into a ball, wrap it in a food wrap and put it in the fridge for 30 minutes.
  • Roll out the cooled dough thinly and put it into a tart tin. Put it back into the fridge for 30 minutes.
  • Punch the dough with a fork, put it in the oven preheated to 190 degrees Celsius and bake for about 15 minutes, until slightly browned.
  • Prepare the stuffing. Cut the bacon and fry it briefly in a dry pan. Add butter and finely chopped onion. Fry for about 5 minutes. Add spinach, fry for 3 minutes. Throw the garlic cloves squeezed through a press into the frying pan. Mix and then add the sliced feta cheese. Fry the whole thing for 5 minutes.
  • Mix the cream with the egg. Add it to the spinach pulp, mix and take it off the heat. Throw in the grated cheese and mix everything. Season the mixture with salt and pepper.
  • Put the spinach pulp on the roasted bottom.
  • Place the dough tin in an oven preheated to 180 degrees Celsius and bake for 25 minutes.

Quiche - a classic of French cuisine

Quiche is a kind of a savoury pie, consisting of a crispy dough and savoury filling, that you pour over with a cream and egg mixture. Below is a recipe for the famous savoury quiche lorraine, also known as the Lorraine cake, which works perfectly as an appetizer.

Ingredients for the shortcrust:

  • 2 glasses of flour
  • 100 g of butter
  • 1 egg
  • 1 tbsp of cold water
  • A pinch of salt

Ingredients for the stuffing:

  • 200 g of smoked bacon
  • 150 g of cheese gruyère
  • 330 ml of the 36% cream
  • 4 eggs
  • spices: salt and pepper

Preparation:

  • Chop flour with butter. Add the egg, water, salt and quickly knead the dough. Form a ball, wrap it in a food wrap and put it into the fridge for 30 minutes.
  • Cut the bacon into thin strips and fry it in a dry pan to make it crispy.
  • Combine the eggs with cream, add salt and pepper.
  • Use the rolling pin, roll the cooled dough and put it into a tart tin. Cover the dough with baking paper, and put ceramic balls on top of it.
  • Place the dough in an oven preheated to 170 degrees Celsius and bake for 15 minutes.
  • Put the bacon and grated cheese on the baked bottom. Pour cream and egg mixture on top of the tart.
  • Place the cake tin in an oven preheated to 170 degrees Celsius and bake for 30 additional minutes.
Classic tarting form

Alsace savoury tart, or the flambee tart

The recipe for the flambee tart is different from the classic recipe for a tart, because the basis of the flambee tart originating from Alsace is not a shortcrust, but bread cake. The classic flambee tart consists of bacon, onions and sour cream. It's a great proposition for lunch or as an appetizer.

Ingredients for the dough:

  • 1,5 glasses of flour
  • 3 tbsp of olive oil
  • 0.5 teaspoon of salt
  • 1/3 glass of lukewarm water

The other ingredients:

  • 150 g of smoked bacon
  • 1 small onion
  • 180 ml of the 18% sour cream
  • 50 ml of natural yoghurt
  • spices: salt and pepper

Preparation:

  • Add flour, olive oil and salt to the bowl. Mix it. Add water and knead a smooth, elastic dough. Wrap the dough in foil and set aside for about 1 hour at room temperature.
  • Mix the cream with the yogurt. Season it with salt and pepper.
  • Cut the bacon into strips and the onion into feathers.
  • Using the rolling pin, roll the dough thinly into a round cake.
  • Spread the rolled-out dough with cream sauce, put the bacon and onion.
  • Put the tart on a baking tray greased with olive oil, put it in the oven preheated to 250 degrees Celsius and bake for 15 minutes.
