The autumn and winter season is slowly beginning, and that means only one thing - the season for aromatic, warming soups. There is no other meal that can warm the body - and the soul - so well on a cold, rainy and windy day. If you don't yet have a favourite soup recipe made from seasonal vegetables, and your kitchen lacks the right utensils to store them, this article is for you!

Soups - the number one nutritional choice for autumn and winter

Soup is undoubtedly one of the meals we reach for most during autumn and winter. In summer, the mere thought of a bowl full of steaming contents gives some people a headache, but on autumn and winter days, there is nothing better than a portion of hot soup. During these cold months of the year, it is worth betting especially on those which, thanks to their ingredients, will additionally warm up the body and help maintain proper immunity. Here are some tried-and-tested soup recipes which, once tasted, will become a permanent feature of your menu!

Aromatic pumpkin soup - the queen of autumn

Pumpkin soup - in autumn and winter, we can confidently call it the queen of all soups. After all, autumn is the season for this unique vegetable - and it is really worth taking advantage of the season for its health-promoting properties. The following recipe will be a hit at any family dinner!

Ingredients for 4 servings:

- 800 g pumpkin (500 g after peeling);
- 250 g potatoes;
- 1 onion;
- 2 cloves of garlic;
- 25 g butter;
- 1 teaspoon fresh grated ginger;
- 1 teaspoon turmeric powder;
- 1 tomato/half a tin of sliced tomatoes
- 1 and 1/2 cups broth;
- 1 cup milk.

Preparation:

1. peel the pumpkin, remove the seeds and dice the flesh.
2. peel and dice the potatoes and onions, peel and slice the garlic.
3.Fry the onions and garlic in butter in a larger frying pan or large pot, then add the pumpkin and potatoes.
4. Season with salt, turmeric and ginger.
5. Fry the mixture for about 5 minutes, stirring occasionally.
6.Pour hot broth into the seasoned vegetables, cover and bring to a boil,
and then - cook over medium heat for about 10 minutes.
7. Scald, peel and cut the fresh tomatoes into quarters and remove the stalks and seeds.
8.Dice the tomato pulp and add to the soup (if you have chosen canned tomatoes
, just add them straight into the stock with the vegetables).
9. Stir and cook for 5 minutes until the vegetables are soft.
10. Blend everything with the addition of milk.

That's all! You can serve the soup with the addition of cream and/or pumpkin or sunflower seeds - best if you roast them lightly in a dry frying pan. You can also add sliced carrots to the onion and garlic.

Gifts of autumn in the pot - traditional mushroom soup

Porcini, boletes, buttermilks, bay boletes, bay boletes, chanterelles ... - autumn wouldn't be autumn without them! Mushrooms are the perfect base for many autumn and winter dishes - and an absolute menu staple at this time of year is mushroom soup, preferably made from homegrown mushrooms. Time for a recipe!

Ingredients for 4 servings:

- 450 g of mushrooms (boletes, chanterelles);
- 2 carrots;
- 5 potatoes;
- 1 onion;
- 1 tablespoon of butter;
- 2 tablespoons of vegetable oil;
- 2 litres of broth;
- 200 ml of 18% cream;
- salt and pepper to taste;
- a little dill.

Preparation:

1. clean the mushrooms thoroughly, rinse them and cut them into smaller pieces.
2. Dice the onions and then fry them in the oil, not forgetting
to stir.
3. Add the peeled and diced carrots, stir and fry the whole thing for 3-4 minutes.
4.Add the peeled and diced potatoes and a tablespoon of butter.
5. Fry the whole thing for 2-3 minutes, stirring occasionally.
6. Pour hot broth into the vegetables and bring to a boil.
7. After 10 minutes, add the sliced mushrooms and bring to a boil again. 8.
8. cook the whole thing for about 10 minutes until the vegetables are soft enough.
9. season the soup with salt and pepper, add chopped dill and when the heat is reduced, add the laced cream.

Voilà- the perfect mushroom soup is ready! Why not have it on your table at your next Sunday dinner?

Goulash soup - a safe and much-loved classic

When it comes to soups ideal for autumn or winter, we cannot fail to mention goulash soup. It is not only warming, but also an exceptionally filling meal that can easily replace a second course. It is the perfect idea for a family gathering around the table or for a week when there is not much time to cook - one-pot dishes prepared in larger quantities turn out to be a real lifesaver then.

Ingredients for 4 portions:

- 300 g pork shoulder or chicken breast;
- 700 g fresh tomatoes/1 cup sliced tinned tomatoes;
- 1 red pepper;
- 3 potatoes;
- 3½ cups broth;
- 1 teaspoon tomato paste;
- 2 tablespoons of butter;
- 1 onion;
- 1 clove of garlic;
- 1 teaspoon of sweet paprika powder;
- pinch of hot paprika powder;
- 2 sprigs of thyme/1 teaspoon of dried thyme;
- half a glass of white wine;
- parsley.

Preparation:

1. peel and dice the onion, peel and halve the garlic, then simmer everything in the butter.
2. add the diced meat and fry thoroughly on all sides.
3. add the paprika powder and thyme and fry for a while, stirring from time to time.
4. pour in the wine and cook for 1-2 minutes, add the hot stock and bring to the boil.
5Add fresh, peeled and diced tomatoes or canned sliced tomatoes with tomato paste.
6. Season with salt and pepper, cover the pot with a lid and cook for about one and a half hours.
7. Then add diced peppers and potatoes, stir and cook covered for another half hour/until the potatoes are soft enough.
8. Sprinkle with chopped parsley.

The goulash soup is ready - enjoy!
