You can prepare strawberry ice cream without added sugar in several ways. The simplest is to blend a mixture of sweet, juicy strawberries with a ripe banana, transfer it to a mould, and freeze. However, this recipe can be slightly enriched by adding dates and cashew nut butter, which gives the ice cream a velvety, creamy texture once frozen. Ingredients:

  • 4 cups of strawberries
  • 2 bananas
  • 0.5 cups of cashew nuts
  • A handful of dried dates
  • 1 teaspoon of vanilla extract

Preparation:

  • Blend nuts and dates into a smooth butter.
  • Add strawberries, bananas, and vanilla extract to the blender. Blend until smooth. Towards the end of blending, add the previously prepared nut-date butter.
  • Transfer the prepared dessert to an ice cream mould, then place in the freezer for about 3 hours. During this time, stir the ice cream every 30 minutes to prevent crystallisation.
  • After this time, scoop the ice cream dessert with an ice cream scoop and enjoy.

  • 1 cup of natural yoghurt

  • 2 tablespoons of honey or agave syrup

Preparation:

  • Put the fruit, yoghurt, and honey or agave syrup into a blender. Blend until you achieve a smooth and creamy mixture.
  • Fill each ice cream mould to ¾ of its height. Insert a stick and freeze for about 2 hours.

How to make homemade egg-free ice cream?

Traditional ice cream is prepared using whipping cream or milk with cooked egg yolks, along with sugar and various flavourings. It's the addition of egg yolks that prevents ice crystals from forming in the ice cream, ensuring it remains soft after freezing and can be easily scooped into bowls.   • 4 ripe bananas
  • 3 tablespoons of bitter cocoa

Preparation:

  • Peel and slice the bananas into smaller pieces, transfer to a freezer-safe container, and put them in the freezer for about 60 minutes.
  • After this time, transfer the bananas to a blender and blend into a smooth mixture. Add cocoa. Mix everything thoroughly.
  • Transfer the mixture to silicone moulds and place in the freezer for about 2 hours.

Gluten-Free Coconut Ice Cream with Chocolate

Delicious, velvety homemade ice cream prepared using millet and banana, with the addition of date syrup and coconut puree, which makes the ice cream perfectly smooth, creamy, and intensely coconutty after freezing.

Ingredients:

  • 450 ml plant milk
  • 200 g coconut puree
  • 100 g millet
  • 4 tablespoons cocoa
  • 4 tablespoons date syrup
  • 1 teaspoon vanilla extract

Preparation:

  • Cook the millet in plant milk for about 20 minutes, then set aside to cool.
  • To the cooled millet, add melted coconut puree, cocoa, date syrup, and vanilla extract. Blend everything with an immersion blender until a uniform and smooth mixture is achieved.

Ingredients:

  • 2 very ripe avocados
  • juice squeezed from 3 limes
  • zest from 3 limes
  • two handfuls of fresh mint leaves
  • 1 teaspoon vanilla extract
  • 1 tablespoon rum
  • cream from 1 can of 400 g coconut milk
  • 100 g xylitol

Preparation:

  • Halve the avocados and remove the pits. Scoop out the flesh and transfer to a blender.
  • To the avocado, add lime juice, lime zest, mint leaves, vanilla extract, and rum. Blend everything until a uniform consistency is achieved.
  • Whip the cream with xylitol until stiff.
